How important is job history on a law school application? Are there any REAL home-based EMPLOYMENT opportunities out there?

If you want to do business consulting it would be wise to obtain a MBA, your undergraduate won’t be as important.
That is just a recommendation, you can start your own business with no degree doing business consulting, it just may be hard to obtain customers.
I would go into either small business as a major or entrepreneurship.
Look for a business program that emphasizes accounting, such as the Cal State East Bay program that offers a BS in Business Administration, with an option in accounting. Accounting is the language of business, and a thorough understanding of business accounting will be necessary for any type of consulting, because most issues will boil down to whether a proposed activity is profitable or not. Therefore, you will need to understand at a very deep level just exactly how a profit is calculated. Other measures are used such as discounted cash flow, etc. and an accounting program will also cover those kinds of calculations. Good Luck.

the only way to be taken seriously as a consultant is to have a LOT of years of work experience in a particular field. no one gets a job as a consultant right out of college – you don;t know anything yet. how can you consult?
